Tri-coloured Pepper Vegetarian Soup

Soup Name: Tri-coloured Pepper Vegetarian Soup

Traditional Chinese Name:  三色椒素湯 (sān sè jiāo sù tāng)

Introduction:
I was inspired to make this soup from my mother-in-law, who used the tri-coloured peppers with pork in one of her soups. You don’t immediately associate these peppers to taste good in soups, but with the right combination of ingredients, it’s actually pretty tasty and extremely healthy! I went for a vegetarian soup to keep it clean and simple and used chestnuts to enhance the soup flavour (instead of meat). My husband is normally not a fan of my “natural & bland” soups, but he thought this was a hit and went back for thirds. To have the kids drink more, I made Japanese noodles and used the soup as the soup base and they drank/ate it all – fabulous!

Amount serves: 8 large bowls

What Ingredients are required?

10 fresh chestnuts, peeled
1 red bell pepper, halved
1 large white onion, halved
1 yellow bell pepper, halved
1 green bell pepper, halved
3 large fresh corn, quartered
3 fresh tomatoes, halved

3 L of water

How do I prepare it?

  1. In a separate pot (not your soup pot), boil the chestnuts for 5 minutes
  2. Remove from heat and immediately peel the chestnuts (both the outer skin and the inner skin)
  3. Boil your soup water
  4. Prepare your vegetables
  5. When the water boils, add all the ingredients together
  6. Boil on medium for 1.5 hours (or use a thermal pot for at least 1.5 hours)

Any precautions?

  • Bell peppers’ benefits can be reduced when it’s been exposed to high heat (and breaks down)

This tea is slightly cooling in nature and sweet to taste.  The tofu and kale are both cooling ingredients.

A variation on the original miso soup (which, by the way is a great soup base in itself), this hearty vegetarian soup is really easy to make with readily available ingredients. I like to keep kale or some seaweed in my pantry, as the kids love it. You need to use relatively firm tofu and depending on how much “stuff” you want in your soup, you can add more or less. Here’s my take on this soup – hearty. I love to eat seaweed and I love tofu, so I really made this soup rich, thick and packed with protein. Optional additions include fresh scallions, scallops or shrimps.

  • It’s a super easy soup to make with a good balance of amino acids, and B Vitamins
  • It is a naturally salty addition (so no salt needed), but do use the miso paste in moderation

Cooking Instructions
  1. Boil your soup water, add in the diced garlic, scallions and kale and boil on medium heat for 5 minutes
  2. Add the rest of the ingredients (tofu, mushroom and miso paste) and boil on medium for 5 minutes while stirring or whisking (to melt/mix the miso paste)
  3. Boil on medium heat for another 10 minutes
  4. Serve and enjoy!

Traditional Chinese Name:

馬蹄粉葛湯 (mǎtí fěn gé tāng)

 

This soup is great for heated bodies and sore throats. It is mildly cooling, but extremely soothing with it’s sweet taste and smoothness.

Since it’s meat free, it’s completely oil free and by adding more carrots, you can sweeten it to the point where you can consider drinking it cold (definitely tasted amazing cold because it really helped cool my poor, fiery throat).

You can consider adding other ingredients as well, such as corn, onions, pumpkin or even meats (pork, chicken or fish are all good meats to “salty” up the soup).

What’s involved?

Prep time: 15 mins

Cook time: 1 hour and 30 mins

Total time: 1 hour and 45 mins

Serves: 6 bowls

Cooking Instructions

  1. Peel and cut arrowroot into large cubes
  2. Wash & peel water chestnuts
  3. Wash, peel and cut carrots into large cubes
  4. Wash and prepare dried tangerine peel (by scraping it with a flat knife on both sides)
  5. Boil your soup water and when it boils, add all the ingredients together
  6. Boil on high for thirty minutes and reduce to medium boil for another hour
  7. Serve and enjoy!
  8. Can be served cold, so you can refrigerate before serving

  • Helps eliminate sore throats and heaty bodies
  • It is a mildly cooling soup
  • It’s quite diverse in that you can add meats (to make it more salty or just add salt in moderation) or keep it a sweet, cold drink and refrigerate prior to consumption

This simple, clean and very sweet soup is great for people with sore throats or heaty bodies. You can actually drink it cold or hot and it’s ideal for all seasons. I’ve decided to go meatless because I wanted to drink it cool and it turned out fabulous. Fat free, oil free and made with all natural ingredients, it’s great for kids and adults alike.

What’s involved?
Prep time: 10 mins

Cook time: 30 mins

  • 4 fresh snow pears, halved and cored
  • 3 fresh carrots, cut into large pieces
  • 2 fresh corn, cut into large pieces
  • 1 fresh onion, quartered

  3. When your soup water boils, throw all the ingredients together

Herbal Tea Name: Ladies’ Monthly Tea

Traditional Chinese Name: 女性恩物湯 (nǚ xìng ēn wù tāng)

This herbal tea is warming in nature and bitter to taste.

My herbalist recommended this “special ladies’ drink” or tea because I complained about an irregular period and serious cramps (almost death like). He’s suggested to make this drink in small portions, once a month and drink one cup a few days before my expected start days to help relieve the cramping, calm the body, and eliminate the wetness and then one more cup after the end of the period. Drink this for about 3 months and then see what happens. This is probably one of the more medicinal drinks I have posted and made and to be honest, it smells and tastes as bad as it looks. It’s quite bitter (and he did say to absolutely not add sugar – as it’s not needed) and has a very unique aftertaste. 

A lot of the ingredients listed here provide a few things:

  • They are primarily on the warming scale in nature
  • These ingredients support both blood replenishment (and Qi)
  • They help dispel wind, remove dampness from the body, and eliminate toxins

 

What’s involved?

Prep time: 5 mins

Cook time: 60 mins

Total time: 65 mins

Serves: 1 cup (for you!)

  1. Soak all ingredients in warm water for ten minutes
  2. In a pot of 1.5 cups of boiling water, throw all the ingredients in together and cover
  3. Boil for an hour (while keeping it covered)
  4. This should make about 1 cups worth (for you and only you!)
  5. Serve warm and enjoy (as it is not recommended during menstruation cycles to drink cold things

Herbal teas is an amazing category of Chinese drinks that are more purposeful and intentional in its creation and consumption.  They aren’t always medicinal and have some more common ingredients that we always drink because they taste so good!

Traditional Chinese Name: 蔬菜湯 (shūcài tāng)

Introduction:

This is basically vegetables and water, but to think that a combination of the right vegetables can be so tasty!  You really don’t need to add any additives such as salt, sugar or meat because it really is delicious as it is.  Consider using a variety of vegetables as well, such as red beets (which I will try as a recommendation from a friend), potatoes, yams, Chinese yams and more.  This soup is ideal for any age group, condition and individual!

What ingredients are required?

3 fresh carrots, cut into large pieces
2 fresh corn, cut into large pieces
1 whole Japanese pumpkin, largely sliced with skin
3 whole red onions, sliced
2 fresh sweet potato, cut into large pieces
3 fresh tomatoes, cored and quartered
2 L of water

How do I prepare it?

  1. Rinse and prepare all vegetables and set aside
  2. Begin to boil your soup water
  3. When soup water boils, add all the ingredients together
  4. Boil on high for an hour
  5. Serve and enjoy!  NO SALT NECESSARY!
