Soup Name: Fish Maw with Seabed Coconut and Pork Bones

Traditional Chinese Name: 海底椰花膠豬骨湯 (hai di ye huā jiāo zhū gǔ tāng)

Introduction:
Fish maw is usually associated with a chicken soup base, but it is just as ideal with pork.  This soup is not naturally that flavorful (as fish maw itself has no taste and neither does dried lily bulb).  The seabed coconut gives it a slightly sweet tinge, but you can consider adding some vegetables (like corn or carrots) to further enhance the flavor.  Salt to taste as necessary – although it’s still refreshing without the salt.

What Ingredients are required?

1 pound of fresh pork bones
5-6 fresh seabed coconut (dried will suffice)
1-2 pieces of dried fish maw
1 piece of dried tangerine peel
20 g of dried lily bulb

1 teaspoon of salt (for marinating pork)
2-3 L of water

How do I prepare it?

  1. Marinate pork in salt overnight (to expel the fire in the pork)
  2. Soak your dried fish maw in warm water (for at least 4 hours)
  3. Boil your soup water
  4. In a separate pot, boil water to blanch your pork
  5. Wash dried lily bulb, tangerine peel and seabed coconut
  6. Cut up the fish maw into edible pieces (optional)
  7. When your soup water boils, add all the ingredients together
  8. Boil on high heat for 30 minutes, reduce to a medium boil for another 2 hours
  9. Serve and enjoy!

Traditional Chinese Name: 玉米南瓜蘿蔔湯 (yù mǐ nán guā hóng luóbo tāng)

Introduction:
Another variation of vegetable pork broth.  The beauty of pork broth and natural vegetables is the different types of soups you can make based on seasonality and availability of various vegetables.  I like orange veggies because of their intensity of beta-carotene and it eats like a meal.  Just another great soup that is naturally sweet and perfect for the whole family.

What Ingredients are required?

1 pound of fresh pork shank
3 large carrots
2 fresh corn
1/2 fresh Japanese pumpkin

1 teaspoon of salt (for marinating pork)
2-3 L of water

How do I prepare it?

  1. Marinate pork in salt overnight (to expel the fire in the pork)
  2. Boil your soup water
  3. In a separate pot, boil water to blanch your pork
  4. Wash and chop all ingredients (pumpkin is both OK with or without skin)
  5. When your soup water boils, add all the ingredients together
  6. Boil on high heat for 30 minutes, reduce to a medium boil for another 1 hour
  7. Serve and enjoy!

Traditional Chinese Name:

木瓜雪耳糖水 (mù gua xuě ěr táng shuǐ)

A traditional Chinese sweet soup (or sweet dessert) that is restores and cleans your body from impurities.  It is said to be great for balancing skin tone and is moisturizing for the body.  Extremely easy to make and is already naturally sweet from the Papayas.

What’s involved?

Prep time: 30 mins

Cook time: 2 hours

Total time: 2 hours 30 mins

Serves: 2 cups

Ingredients

Cooking Instructions

  1. Soak snow fungus and dried apricot kernals overnight
  2. Start boiling your soup water
  3. Using scissors (or knife) cut enlarged snow fungus into edible sizes
  4. Wash and remove seeds from papaya.  Cut into edible cubes
  5. When water boils, add all ingredients together
  6. Boil on medium-high heat for at least 30 minutes (or until snow fungus is at desired softness)
  7. Serve and enjoy!

Traditional Chinese Name: 木瓜栗子湯 (mù gua lì zi tāng)

Introduction:
A simple and extremely sweet soup that is ideal for relieving symptoms of cough and sore throat.  It also brings moisture to the body and is highly rich in Vitamin C and Beta Carotene.  Ideal for children and pregnant woman, it’s a family favourite.

What Ingredients are required?

1 pound of fresh pork shank
1 whole fresh papaya (red meat)
15 whole raw chestnuts
1 fresh lily bulb (or dried)

How do I prepare it?

  1. Boil a separate pot of water to blanch the pork shank
  2. When water is boiling, add in chopped pork shank and boil on high heat for 5 minutes
  3. Strain and set aside
  4. In another pot of water, add chestnuts and boil for 8-10 minutes
  5. Take chestnuts off stove and strain of water.  With gloves, peel chestnuts while still hot (the peel should fall off)
  6. Boil your soup water
  7. Wash and cube papaya
  8. Wash lily bulb in warm water
  9. When your soup water boils, add all the ingredients together
  10. Boil on high heat for 30 minutes, reduce to a medium boil for another 1 hour.
  11. Serve and enjoy!

Easy Cream of Corn and Egg Drop Soup

Soup Name:  Easy Cream of Corn and Egg Drop Soup

Traditional Chinese Name: 玉米湯 (yù mǐ tāng) 
 
Introduction:
This is one of the easiest soups to make and the ingredients are easy to find and pending your creativity, you can make it hearty and tasty for your kids.  My dad used to make this all the time and I still love it! 

What Ingredients are required?

1 can of corn (creamed)
2 whole chicken eggs
1 L of water

Optional additions:

1/4 pound of ground meat (pork or chicken)
1 cup of frozen vegetables (peas, corn, carrots)

How do I prepare it? 

  1. Boil water with can of creamed corn
  2. In a separate  bowl, crack open and scramble chicken eggs
  3. Add additional ingredients as necessary
  4. When boiling, slowly stream in scrambled eggs while stirring soup
  5. Boil for another 5 minutes
  6. Serve!

  • Extremely easy to make and diversify
  • Neutral soup ideal for anyone’s consumption

Any precautions?

  • I normally don’t recommend using corn starch as a thickener, it serves no real purpose other than to thicken

 

Fuzzy Melon with Corn in Pork Bones Soup

Soup Name:  Fuzzy Melon with Corn in Pork Bones Soup

Traditional Chinese Name: 节瓜玉米豬骨湯 (jié guā yù mǐ zhū gǔ tāng) 
 
Introduction:
A mildly sweet soup that is rich in vitamins and nutrients.  It can be eaten as a meal because of the hearty variety of vegetable assortment and is easy to make. 

What Ingredients are required?

1 pound of fresh pork bones 
2 fresh fuzzy melons
2-3 fresh corn
1 foot of fresh chinese yam
5 dried string figs
2-3 L of water
1 teaspoon of salt (to marinate the pork)

How do I prepare it? 

  1. Pre-marinate the pork bones overnight with the salt (although this step is not necessary)
  2. Boil your soup water
  3. Blanch pork bones in a separate pot of boiling water
  4. Wash, cut and cube fuzzy melon (without skin) and corn 
  5. When the soup water boils, add all the ingredients together
  6. Boil on high for thirty minutes, reduce to a simmer boil for another 1.5 hours
  7. Serve and enjoy!

Any precautions?

  • Consume soup as soon as possible.  Fuzzy melons tend to sour if left out too long.
